Oysters on the Half-shell

Ingredients

Directions

Prepare the oysters

  1. Rinse the oysters with cold water to remove any mud.

  2. Open the oysters by loosening them from both sides of the shell, remove the shallow half, and leave the oyster in the deep half.

  3. Remove any broken shell pieces from the oysters.

  4. Keep them in the ice-box until ready.

  5. Open and arrange the oysters just before serving.

Arrange and serve

  1. Arrange 5 or 6 oysters in their deep shells on plates, with the narrow end facing the center.

  2. Place a quarter of a lemon in the center of the oysters.

  3. Serve additional lemon on the table.

  4. Serve thinly sliced, buttered brown bread folded to enclose the butter.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Are the dish itself, served raw, so their freshness and clean texture carry the flavour.
Lemon
Its acidity brightens the briny oyster flavour and cuts the richness of the meat.
Butter
Adds richness and fat that softens the bread and balances the salty oysters.
Brown bread
Provides a neutral, sturdy base whose slices carry the melted butter alongside the oysters.

The step that matters

Keep the oysters cold and open them just before serving. Raw oysters spoil quickly at warm temperatures, and opening them early lets their liquor drain and the flesh dry out, so chilling until the last moment protects both safety and texture.

Swap the lemon
