Celery Soup

Ingredients

Directions

Prepare

  1. Pick over the rice and wash it in cold water, then drain.

Make the soup

  1. In a pot, combine the rice with 6 cups of boiling water and add the chopped celery and salt.

  2. Boil gently for 1 hour, ensuring there is enough water to prevent burning.

  3. Use a potato masher to rub the rice and celery through a sieve back into the saucepan.

  4. Add hot milk to achieve a thick cream consistency and season with salt, white pepper, and nutmeg.

  5. Stir the soup until it boils, then serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Breaks down during simmering and, pressed through a sieve, thickens the soup to a smooth body.
Celery
Softens as it simmers and adds its vegetable flavour and body to the soup.
Hot milk
Adds creaminess and richness, producing the thick cream consistency of the soup.

The step that matters

Boiling gently with enough water. Rice and celery can stick and scorch on the bottom of the pot if the water runs low or the heat is too high. Keeping enough liquid and a gentle simmer prevents burning and lets the rice soften fully for sieving.

Swap the white pepper

How well each one fits the dish's main ingredients (rice, celery, milk, nutmeg):
