Green Turtle Clear Soup

Ingredients

Directions

Clarify the stock

  1. In a saucepan, mix the egg white, shell, and cold water.

  2. Pour the cold turtle stock into the saucepan.

  3. Heat the mixture over medium heat, stirring occasionally to prevent sticking.

  4. Allow it to gently boil until the egg forms a thick scum on the surface and the soup is clear underneath.

Strain and serve

  1. Strain the soup through a folded towel in a colander, letting it run through slowly without squeezing.

  2. If the soup cools, reheat it and season to taste.

  3. Serve hot with lemon and wine.

What each ingredient does

Raw egg white and shell
Egg white collects impurities into a scum that clarifies the stock as it heats.
Turtle soup stock
Forms the base liquid of the soup and carries its flavour.

The step that matters

Allow it to gently boil until the egg forms a thick scum and the soup is clear underneath. Boiling too hard breaks up the egg raft and mixes the scum back into the soup, leaving it cloudy. A gentle simmer lets the egg coagulate and trap particles so they rise to the surface.

Swap the lemon

How well each one fits the dish's main ingredients (egg, wine):

  1. Lemonthe original
  2. Grapefits about as well
  3. Applefits less well
  4. Plumfits less well

Fit is the average pairing score against egg, wine. Candidates are from the same food group and used in at least 100 recipes.
