Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sheepshead fish
Provides the main body of the dish, cooked gently in the poaching liquid.
Lemon
Its acidity brightens the mild flavour of the fish.
Milk
Adds richness and softness to the poaching liquid and the sauce.

The step that matters

Gradually bring the fish to a boil, then gently simmer. Starting in cold liquid and heating slowly lets the flesh cook evenly and firm up without breaking apart. A hard, rapid boil would toughen the outside and make the fish fall apart.

Swap the lemon

How well each one fits the dish's main ingredients (fish, milk):

  1. Coconutfits better
  2. Lemonthe original
  3. Vanillafits less well
  4. Applefits less well

Fit is the average pairing score against fish, milk. Candidates are from the same food group and used in at least 100 recipes.
