How to Dress Terrapin

Ingredients

Directions

  1. Loosen the sides of the shells of the boiled terrapin and lift off the top shell.

  2. Remove the under shell and pull off the legs, leaving the flesh attached.

  3. Break off the sharp claws and discard the head, placing the legs on a dish.

  4. Carefully remove all the eggs and place them in a bowl of hot water.

  5. Separate the liver from the entrails and cut out the gall-bag without breaking it.

  6. If the gall-bag is cut, discard the liver and wash your hands before continuing.

  7. Cut the liver into half-inch square pieces and combine it with the terrapin flesh.
