Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Soft-shell Crabs Fried

Ingredients

Directions

Prepare the crabs

  1. Wash the soft-shell crabs in cold water and lay them on their backs on a clean surface.

  2. Select plump, alive crabs, handling them carefully to avoid breaking off the claws.

  3. Use a small, sharp knife to cut a half-circle out of the body behind the eyes to remove the eyes and sand-bag.

  4. Lift the apron near the back of the under shell and cut off the tuft or remove it entirely.

  5. Press the back shell away from the body to take out the tough, fibrous fins and dry the crabs on a clean towel.

Coat and fry

  1. Prepare a platter of fine dry bread crumbs mixed with a little pepper and salt.

  2. Heat a frying kettle or large frying pan half full of smoking-hot fat.

  3. Beat the eggs until liquid, roll the crabs in the crumbs, dip them in the eggs, then roll them in the crumbs again.

  4. Fry the crabs in the hot fat until they are brown all over, then remove them with a skimmer.

  5. Drain on brown paper to remove excess grease and serve hot with lemon wedges for garnish.

What each ingredient does

Soft-shell crabs
Provide the main body of the dish, eaten whole after cleaning, with a tender shell that crisps when fried.
Eggs
Act as a binder that helps the bread crumbs adhere to the crabs.
Fine dry bread crumbs or cracker dust
Form a crisp, browned coating that protects the crab during frying.

The step that matters

Frying in smoking-hot fat. If the fat is not hot enough, the coating absorbs grease and turns soggy instead of crisping quickly. Very hot fat sets the crumb crust fast and browns the crab evenly, keeping the inside moist.
