Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the main meaty filling that gives the croquettes their body and texture.
Flour
Thickens the boiling water into a sauce that binds the chopped meat together.
Eggs
Egg yolks set the mixture and beaten eggs help the crumb coating stick.
Butter
Adds fat and richness to the sauce and carries the onion flavor.
Cracker dust or bread crumbs
Forms a coating that browns and turns crisp when fried.

The step that matters

Cool the mixture fully before shaping. As the flour sauce cools, its starch thickens and firms, so the mixture holds its shape. Shaping it while still soft makes the rolls slump and break apart in the hot fat.

Swap the onion

How well each one fits the dish's main ingredients (butter, flour, egg, bread, lemon):

  1. Shallotfits better
  2. Asparagusfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against butter, flour, egg, bread, lemon. Candidates are from the same food group and used in at least 100 recipes.
