  1. In a frying pan, melt the butter over medium heat.

  3. Stir in the sherry or madeira.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Giblets
Provide the main meaty filling and savory flavor of the stuffing.
Butter
Adds richness and helps the bread brown lightly in the pan.
Stale bread
Forms the body of the stuffing and soaks up the flavors and fat.
Sherry or madeira
Adds aromatic depth and a touch of sweetness to the stuffing.

The step that matters

Stir until light brown. Browning the bread and giblets in butter builds flavor through the Maillard reaction. Stopping too early leaves the stuffing bland, while overcooking can make it dry and bitter.

Swap the sage

How well each one fits the dish's main ingredients (pepper, butter, bread, sherry):

  1. Thymefits better
  2. Parsleyfits about as well
  3. Sagethe original
  4. Marjoramfits about as well

Fit is the average pairing score against pepper, butter, bread, sherry. Candidates are from the same food group and used in at least 100 recipes.
