Why it works: Almond and rose are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 1,465 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓
Almond Macaroons
Ingredients
Directions
The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the batter
Blanch the almonds and pound them smooth in a mortar, adding rose water as needed.
Beat one egg white and mix it with the pounded almonds.
Beat two more egg whites until stiff and mix with ½ pound of powdered sugar.
Combine this mixture with the almond mixture until smooth.
Stir in another ¼ pound of powdered sugar until the batter is creamy.
Shape and bake
Form the batter into small balls and place them on slightly wet paper.
Bake the macaroons in a cool oven at 300°F (150°C).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Almonds
- Provide the main body and nutty flavor of the macaroons.
- Egg whites
- Whipped to stiffness to lighten the batter and help the macaroons hold their shape.
- Powdered sugar
- Adds sweetness and helps create a smooth, creamy batter texture.
The step that matters
Beating the egg whites until stiff. Stiffly beaten whites trap air that lightens the batter. If they are under-whipped or deflated when folded in, the macaroons will spread flat and turn dense.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
