Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms a starchy coating that cooks into a tender, cohesive wrapper around the apple.
Apples
Provide the filling; their flesh softens during boiling while the skin holds the shape.
Sugar
Adds sweetness and helps the filling taste rich against the mild rice and apple.
Jelly or marmalade
Adds sweetness and fruit flavour to the centre of each apple as it cooks.

The step that matters

Covering each apple completely with rice. Any exposed patch of apple can burst or leak sugary juice into the water during the long boil. A full, even layer of rice about ½ inch thick seals the fruit and holds the dumpling together.

Swap the apple

How well each one fits the dish's main ingredients (rice, sugar):

  1. Vanillafits better
  2. Coconutfits better
  3. Raisinfits better
  4. Applethe original

Fit is the average pairing score against rice, sugar. Candidates are from the same food group and used in at least 100 recipes.
