Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough once mixed with liquid.
Baking powder
Releases gas in the hot oil, helping the crullers puff and lighten.
Butter
Adds fat that tenderizes the dough and carries flavor.
Sugar
Adds sweetness and helps the exterior brown in the hot oil.
Egg
Binds the dough and adds richness and structure.

The step that matters

Stir in the flour and milk quickly. Overworking flour once liquid is added develops gluten, which makes the crullers tough and dense rather than tender.

Swap the nutmeg

How well each one fits the dish's main ingredients (flour, butter, sugar, egg, milk):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Jalapenofits less well
  4. Capersfits less well

Fit is the average pairing score against flour, butter, sugar, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
