Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Fine Beef Soup

Ingredients

Directions

Prepare

  1. Wash the beef well and cut off all the meat, breaking up the bones.

  2. Place the meat and bones in a large pot.

  3. Add 4 ½ cups of water and sprinkle with pepper and salt.

Simmer

  1. Bring to a boil over moderate heat, skimming off any fat that rises to the top.

  2. Cover the pot, except when skimming, and boil slowly for 8‑9 hours.

  3. Once the meat is reduced to rags, remove from heat and let it settle for 15 minutes.

Strain and store

  1. Strain the soup into a large earthen pan and cover it.

  2. Store in a cool, dry place until the next day.

What each ingredient does

Fresh beef
Provides the meat and bones that release flavour and gelatin into the broth during long simmering.
Water
Acts as the cooking liquid that extracts flavour from the beef and bones.

The step that matters

Skimming off the fat during the first boil. Fat that rises early would otherwise stay in the broth and make it greasy. Skimming while the soup first comes to a boil removes it before the long simmer.
