Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Gives the broth its body and rich meaty flavor as it stews down.
Ham or bacon
Adds smoky, salty fat that flavors the broth as it simmers.
Calf's feet
Adds gelatin, which gives the broth a fuller, silkier body.
Onions
Build sweetness and savory depth in the broth as they soften.
Flour and butter dumplings
Soak up broth and add a soft, tender starchy texture.

The step that matters

Stew slowly until the meat falls apart. Low, gentle heat lets collagen in the bones and connective tissue break down into gelatin, giving the broth body. Boiling hard makes the meat tough and the broth cloudy.

Swap the onion

How well each one fits the dish's main ingredients (veal, ham, meat, celery, marjoram, carrot, turnip):

  3. Shallotfits better
