Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ox tails
Release gelatin and meaty flavor into the broth during long, gentle simmering.
Onions
Add sweetness and savory depth to the broth, and their pulp thickens the soup.
Flour
Combined with butter, it thickens the soup and gives it a smooth body.
Butter
Adds richness and carries flour smoothly into the soup as a fat-based thickener.
Carrots
Contribute natural sweetness and body to the broth as it simmers.
Turnips
Add mild sweetness and earthy flavor to the simmering broth.

The step that matters

Skim the soup carefully. Fat and foam rise to the surface during simmering. Removing them keeps the broth clear and prevents a greasy, cloudy result.
