Directions

Poach the fish

  1. Place the cleaned rock-fish in a fish kettle and cover it with water.

  2. Dissolve the coarse sea salt in the water.

  3. Set the kettle over moderate heat and avoid boiling too fast.

  4. Skim the surface regularly.

Serve

  1. Once cooked, drain the fish and place it on a large dish.

What each ingredient does

Rock-fish
Is the main protein, cooked gently in salted water until done.
Coarse sea salt
Seasons the poaching water so the fish is flavored through its cooking liquid.
Hard-boiled eggs
Add rich, creamy richness and a mild contrast to the delicate fish.

The step that matters

Keep the water at a gentle simmer. Boiling vigorously can break up delicate fish flesh and cause it to toughen or fall apart. Gentle heat cooks the fish evenly while keeping it intact. Skimming the surface removes foam and impurities, keeping the poaching liquid clean.

Swap the celery

How well each one fits the dish's main ingredients (fish, egg, sauce, pepper):

  1. Capersfits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Celerythe original

Fit is the average pairing score against fish, egg, sauce, pepper. Candidates are from the same food group and used in at least 100 recipes.
