Scolloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Butter a deep dish and line the sides and bottom with a thick layer of bread crumbs.

  3. Add a layer of seasoned oysters and place small bits of butter on top.

  4. Cover with more bread crumbs and repeat the layers until the dish is filled, finishing with a thick layer of crumbs on top.

  5. Bake for a short time until heated through, being careful not to overcook.

  6. Alternatively, use clam shells or tin scallop shells, buttering and crumb coating each shell.

  7. Season the oysters with cayenne and nutmeg, adding a small piece of butter on each.

  8. Fill the shells with a little oyster liquor thickened with bread crumbs.

  9. Brown the shells over coals or under a hot broiler.
