Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Of Pork

Ingredients

Directions

  1. Make a force-meat by mixing grated bread, minced onion, sage, pepper, coarse sea salt, and beaten egg yolk.

  2. Spread the mixture inside the pork and roll it up.

  3. Score the meat in circles with a sharp knife and rub powdered sage into the cuts.

  4. Tie the roll of meat with buttered twine to keep it together.

  5. Attach a hook to one end and roast the pork over a clear, brisk fire, moistening the skin with butter.

  6. Alternatively, bake it in a Dutch oven.

  7. Thicken the gravy with a little flour and flavor it with a glass of wine.

  8. Serve with currant jelly.
