Pork Steaks

Ingredients

Directions

Prepare the pork

  1. Cut pork steaks about ½ inch thick and remove the skin.

  2. Trim the steaks neatly and beat them.

  3. Season with pepper, coarse sea salt, and powdered sage or marjoram.

Cook and serve

  1. Broil over a clear fire until fully cooked, turning once.

  2. To check doneness, cut one steak; if red inside, return it to the grill.

  3. For gravy, stew trimmings or coarse pieces of pork with chopped onions in a little water.

  4. Skim the gravy carefully and serve it in a boat with the steaks.

  5. Serve the pork steaks with apple sauce.

What each ingredient does

Pork steaks or chops
Provide the main meat, which cooks through over direct heat to a firm, browned texture.
Onions
Stewed with trimmings in water, they add sweetness and flavour to the gravy.
Apple sauce
Its tart, sweet fruit flavour balances the rich, savoury pork.

The step that matters

Checking doneness by cutting one steak. Pork must be fully cooked inside, but cutting into it releases juices and the centre can be hard to judge by eye. A red centre means more cooking is needed, so the check is what confirms the steaks are safe and tender.

Swap the apple

How well each one fits the dish's main ingredients (pork, pepper, sage, onion, sauce):

  1. Limefits better
  2. Avocadofits better
  3. Lemonfits better
  4. Applethe original

Fit is the average pairing score against pork, pepper, sage, onion, sauce. Candidates are from the same food group and used in at least 100 recipes.
