Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork leg cutlets
Forms the main body of the dish, cooked through by frying.
Beaten egg
Binds the breadcrumb coating so it adheres to the cutlets.
Bread crumbs
Form a crisp, browned coating when fried.
Flour
Thickens the pan juices into a light gravy.

The step that matters

Frying the cutlets. Frying for a long period while turning often helps the coating brown evenly and the meat cook through without drying out or burning. Keeping the fat at a steady heat matters for an even crust.
