Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork
Provides the meat and fat that make up the body and juiciness of the sausage.
Egg yolk
Binds the seasoned meat so it holds together when formed into cakes.
Sage
Adds the dominant savory, herbal aroma that defines the sausage flavour.
Salt
Seasons the meat and helps draw out proteins that bind the mixture.

The step that matters

Pack the mixture into a stone jar and press it down hard. Pressing removes air pockets so the meat stays dense and cures evenly in the cool, dry store, reducing spoilage risk and keeping the texture firm.
