Ingredients

Directions

Prepare the chicken

  1. Boil or roast the chicken until fully cooked, then let it cool.

  2. Remove the skin and fat, disjoint the chicken, and cut the meat into small pieces, about 1 inch.

Prepare the celery

  1. Wash and split the celery, cutting the white part into 1-inch pieces.

Make the dressing

  1. Mix the chicken and celery in a deep dish and cover it.

  2. In a flat dish, mash the egg yolks with a wooden spoon until smooth.

  3. Add salt, cayenne pepper, mustard, vinegar, and sweet oil to the egg yolks and mix thoroughly.

Serve

  1. Pour the dressing over the chicken and celery just before serving and mix well with a fork.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein and bulk of the salad.
Celery
Adds crisp texture and a fresh, watery crunch.
Egg yolks
Emulsify with the oil and mustard to form a thick, creamy dressing.
Mustard
Helps stabilise the emulsion and adds sharp flavour.
Sweet oil
Provides fat and richness, carrying flavour through the dressing.
Vinegar
Adds acidity that brightens and balances the rich dressing.

The step that matters

Adding the oil and vinegar to the egg yolks. Egg yolks emulsify oil only when the oil is added gradually and mixed in thoroughly. Adding it all at once or unevenly can split the dressing into separate oil and liquid layers, so it should be blended smoothly before it is poured over the salad.

Swap the celery

How well each one fits the dish's main ingredients (chicken, egg, pepper, mustard, vinegar):

  1. Tarragonfits better
  2. Dillfits better
  3. Capersfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, egg, pepper, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes.
