Ingredients

Directions

  1. Truss the partridges and loosen all the joints with a knife without cutting them apart.

  2. Scald, peel, and chop the fresh mushrooms.

  3. Mix the mushrooms with grated bread crumbs, cream, and the beaten egg yolk.

  4. Stuff the partridges with the mixture.

  5. Cover the sides and bottom of a deep dish with pastry, adding a layer of thinly sliced cold boiled ham.

  6. Add whole button mushrooms and hard boiled egg yolks, then season with pepper.

  7. Place the partridges in the dish, adding a bit of butter rolled in flour on each.

  8. Cover with a thick lid of pastry, notched and decorated with pastry leaves.

  9. Before sealing, pour a little water into the pie.
