Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Rind supplies aromatic oils and juice supplies the sharp acidity.
White brandy
Acts as the alcoholic base that extracts flavour from the rind and keeps the cordial stable.
Loaf sugar
Provides sweetness and body to balance the lemon's acidity.
Milk
Hot milk binds with particles in the mixture so they settle out, helping it clarify.

The step that matters

Boiling the milk and pouring it hot into the mixture. Hot milk coagulates and carries suspended particles down as it cools, so the cordial clears. Adding it cold or unheated gives a cloudier result that is harder to strain.
