Force-meat

Ingredients

Directions

  1. Remove fat, skin, bone, and sinews from the meat or fish.

  2. Chop the meat or fish finely and pound it to a paste.

  3. Pass the mixture through a wire sieve using a wooden masher.

  4. To make panada, cook together equal parts bread and cream or stock until smooth.

  5. If using beef suet, chop it finely and pound it with the meat and bread before sieving.

  6. If using calf's udder, tie it in netting and boil in salted water for one hour, then chop, pound, and sieve.
