Why it works: Potato and corn match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 938 recipes. Both carry (e)-2-octenal, which smells fatty, green. The science ↓

Broiled Calf's Liver

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat the broiler.

  2. Slice the calf's liver into pieces.

  3. Season with salt and pepper.

  4. Broil the liver for about 4-5 minutes on each side until cooked through.

  5. Meanwhile, hash the potatoes and cook them in a skillet with butter until golden brown.

  6. Prepare a plain omelet by whisking eggs and cooking in a pan until set.

  7. Serve the broiled liver with hashed potatoes and corn bread.
