Prepare the mixture

  1. Boil the potatoes in a pot, placing the fish on top. Cover with boiling water and cook for 30 minutes.

  2. Drain the water and mash the fish and potatoes together until smooth and light.

  3. Add the butter, pepper, and beaten eggs to the mixture and combine well.

Fry and serve

  1. Heat a deep kettle of boiling fat.

  2. Dip a tablespoon in the hot fat, scoop a spoonful of the mixture, and drop it into the boiling fat.

  3. Fry until golden brown, about 2 minutes, without crowding the balls.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw fish
Provides the main flavor and protein that forms the body of the balls.
Potatoes
Add starch and bulk, making the mixture soft and easier to shape.
Eggs
Bind the mixture together and help the balls hold their shape while frying.
Butter
Adds richness and moisture, softening the mixture for a tender texture.

The step that matters

Fry without crowding the balls. Adding too many balls at once drops the fat temperature, so the balls absorb more oil and turn greasy and pale instead of browning crisply.

Swap the potato

How well each one fits the dish's main ingredients (fish, egg, butter, pepper):
