What each ingredient does

Mealy potatoes
Their starch breaks down into a smooth, thickening body when mashed and simmered.
Broth
Provides the liquid base and savory flavor that the mashed potato suspends in.
Onions
Add aromatic sweetness and a fried, savory note to the finished soup.

The step that matters

Skim off any black scum that rises to the surface.. Impurities and proteins rise as scum during boiling and can cloud the soup and taste bitter. Removing them while the soup is still simmering keeps the broth clean and clear.

The recipe marks onion as optional. How well each one fits the dish's main ingredients (potato, pepper, bread):

  1. Capsicumfits better
  2. Tomatofits better
