What each ingredient does

Sole
Forms the main body of the dish, cooking gently in the buttery sauce.
Fresh butter
Carries flavour and moisture and helps the bread crumbs brown in the oven.
Fine bread crumbs
Form a crust over the fish that browns and holds in moisture.
Dry white wine or sherry
Adds acidity and aroma to the sauce that softens the fish's richness.
