A Rich English Brown Gravy

Ingredients

Directions

Brown the meat and onion

  1. Brown the ham lightly in a pan, then remove it.

  2. Fry the neck of beef in the same pan until done, then add it to the ham.

  3. Add the onion and brown gently.

Simmer and reduce

  1. Pour in the boiling water or broth and bring to a slow boil.

  2. Skim off any scum that forms on the surface.

  3. Add salt, cloves, mace, peppercorns, savory herbs, carrot, and celery.

  4. Boil the gravy gently until reduced to about 1 pint.

Strain and finish

  1. Strain the gravy and let it sit until the fat rises to the top.

  2. Reheat the gravy, adding more salt if needed and flavoring with mushroom catsup or cayenne vinegar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Neck of beef
Provides rich meat flavor and body as it cooks down into the gravy.
Lean ham
Adds savory, salty depth from browning in the pan.
Onion
Browning adds sweetness and savory aroma to the base.
Black peppercorns
Contribute a sharp, aromatic warmth as the liquid simmers.

The step that matters

Skim off the scum. Scum rising at the first slow boil is coagulated protein and impurities; removing it keeps the gravy clear and clean-tasting.

Swap the mace

How well each one fits the dish's main ingredients (ham, beef, flour, pepper, onion, clove, carrot):

  1. Marjoramfits better
  2. Celeryfits better
  3. Parsleyfits better
  4. Macethe original
