What each ingredient does

Elderberries
Provide the main fruity flavour and colour of the catsup.
Vinegar
Extracts the fruit's flavour and adds the sharp acidity that preserves the catsup.
Shallots
Add a mild savoury, aromatic background to the liquid.

The step that matters

Strain without pressure. Pressing the fruit forces through fine solids and cloudy pulp, which makes the catsup murky and can add bitter, rough flavours. Letting the liquid drip clear keeps the catsup smooth and clean-tasting.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, ginger, clove, shallot):

  1. Allspicefits better
  2. Cinnamonfits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against vinegar, ginger, clove, shallot. Candidates are from the same food group and used in at least 100 recipes.
