Why it works: Cucumber and onion match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 6,050 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young cucumbers
Provide the crisp, fresh vegetable base that becomes the pickle.
Boiling vinegar
Provides the acidity that preserves and sharpens the flavor of the pickles.
Salt
Adds seasoning and helps draw flavor into the cucumbers.

The step that matters

Seal the jar to protect it from air and let it sit for one to two months.. Cucumbers must stay fully covered by the vinegar brine and sealed from air so the flavor develops evenly and spoilage is limited. Sealing keeps oxygen out, while the long rest lets the brine slowly penetrate the cucumber flesh.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (cucumber, vinegar):

  1. Radishfits better
  2. Mustardfits better
  3. Cauliflowerfits better
  4. Onionthe original

Fit is the average pairing score against cucumber, vinegar. Candidates are from the same food group and used in at least 100 recipes.
