Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main earthy flavour of the powder once dried and ground.
Veal gravy
Supplies savoury body and meaty depth to the sauce.
Cream
Adds fat and richness, giving the sauce a smoother, rounder mouthfeel.
Flour
Thickens the sauce by starch gelatinising as it heats in the liquid.

The step that matters

Drying the mushrooms thoroughly. Any remaining moisture lets the powder clump, spoil or mould in storage. Fully dry mushrooms grind to a fine powder and keep well in sealed, dry bottles.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (mushroom, veal, cream, flour):

  1. Nutmegfits better
  2. Turmericfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against mushroom, veal, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
