Cure

  1. Rub the tongue with a handful of fine salt and let it drain overnight.

  2. Mix saltpetre, coarse sugar, and black pepper together, then rub the mixture over the tongue and add bruised juniper berries.

  3. After 2 days, add the coarse sea salt and let it sit for 3 more days.

  4. Pour treacle over the tongue and let it pickle for 14 days.

Smoke

  1. Hang the tongue to drain, wrap it in brown paper, and smoke it over a wood fire for 2 to 3 weeks.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Saltpetre
Helps cure the meat and gives it a characteristic pink colour.
Coarse sea salt
Draws moisture out of the tongue and firms its texture during curing.
Treacle
Adds sweetness and a dark colour while sugaring the surface during pickling.
Coarse sugar
Balances the salt and contributes to browning and flavour in the cure.

The step that matters

Pouring the treacle and pickling for 14 days. The cure must penetrate evenly through the thick tongue. Salt and sugar draw moisture out and move inward slowly, so the full pickling time is needed for the meat to be cured through rather than just on the surface.
