What each ingredient does

Beef kidney
Is the main meat, cooked until tender and firm through frying.
Flour
Coats the slices to brown during frying and thickens the gravy.
Butter
Fat for frying the gravy base and carries flavour into the sauce.
Mushroom ketchup, lemon juice, or vinegar
Adds acidity that sharpens the rich, mineral flavour of the kidney.

The step that matters

Simmer the gravy after adding the flour and water. Flour needs to be cooked in fat and simmered in liquid so starch swells and the raw flour taste cooks off. Stopping early leaves the gravy thin or pasty-tasting.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (beef, pepper, flour, butter, mushroom):

  1. Shallotfits better
  2. Chivefits about as well
  3. Potatofits about as well
  4. Onionthe original

Fit is the average pairing score against beef, pepper, flour, butter, mushroom. Candidates are from the same food group and used in at least 100 recipes.
