Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. In a bowl, combine minced beef, cold roast joint, cayenne, mace or nutmeg, and salt.

  2. Add minced shallots, chopped mushrooms, and mushroom ketchup. Mix well.

  3. Moisten the mixture with gravy and transfer it to a deep dish.

Bake

  1. Top with a layer of bread crumbs and moisten with clarified butter.

  2. Bake in a slow oven at 300°F (150°C) for 20 minutes, or brown in a Dutch oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Minced beef
Forms the savory body of the dish and sets firm as it cooks.
Bread crumbs
Form a crisp, browned top layer when baked with butter.
Clarified butter
Adds fat that helps the crumb topping brown and taste rich.
Gravy
Adds moisture that keeps the meat mixture from drying out as it bakes.
Mushroom ketchup
Contributes concentrated savory, umami flavor to the meat.

The step that matters

Moistening the mixture with gravy before baking. Minced meat is lean and dries out in heat; enough liquid keeps it tender, while too much would make the mixture soggy under the crumbs.
