Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
To Boil Rabbits
Ingredients
Directions
Choose a young rabbit and wash it well.
Soak the rabbit and truss it firmly, skewering the head to the sides.
Drop the rabbit into plenty of boiling water and simmer gently for 30 to 40 minutes.
Prepare a sauce of your choice: mix rich white sauce with parboiled, finely pounded livers, and season with cayenne and lemon juice.
Alternatively, use white onion sauce, parsley and butter, or mushroom sauce.
