What each ingredient does

Onions
Softened and browned onions build the thick body and sweet, savoury base of the curry.
Butter
Carries the spices and adds richness and a rounded flavour to the sauce.
Gravy
Supplies the liquid that lets the sauce stew and the meat cook gently.
Mutton or other meat
Becomes tender through long, gentle simmering, absorbing flavour from the sauce.

The step that matters

Stewing without burning. The onion and spice paste is prone to scorching on the base of the pan while it thickens. Keeping the heat low and stirring, with enough butter and gravy present, lets the onions soften and release sweetness without turning bitter.

Swap the onion

How well each one fits the dish's main ingredients (butter, clove, garlic, turmeric, ginger, pepper, mutton):
