Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the custard

  1. Pour boiling milk over the bread crumbs and butter in a bowl. Cover and let stand until the bread is well soaked.

  2. Stir in sugar, egg yolks, candied orange rind, and nutmeg until combined.

  3. Let the mixture cool, then pour it into a baking dish.

Top and bake

  1. Beat the egg whites to a firm froth and spread them over the top. Sprinkle with sifted sugar.

  2. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Absorb the milk to form the soft, custard-like body of the pudding.
Eggs
Set when baked to bind the pudding, with whites forming a light, crisp topping.
Milk
Provides the liquid that soaks the crumbs and cooks into a tender custard.
Sugar
Adds sweetness and helps the beaten egg whites hold their froth and brown lightly.
Butter
Adds richness and fat, giving the pudding a softer, more tender texture.

The step that matters

Beating the egg whites to a firm froth. Whites trapped with air give the topping its lift and light texture; under-beaten or greasy whites will collapse and stay flat and dense in the oven.

Swap the orange

How well each one fits the dish's main ingredients (bread, butter, milk, sugar, egg, nutmeg):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against bread, butter, milk, sugar, egg, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
