What each ingredient does

Green gooseberries
Provide the fruit that becomes tender and chewy as it is cooked and dried.
Sugar
Sweetens the fruit and, dissolved in syrup, preserves it and helps it keep its shape.

The step that matters

Simmering in the syrup. Simmering only until the gooseberries turn clear and tender lets the syrup penetrate without bursting the skins. Overcooking can split the fruit and make it mushy, while too little time leaves it underpenetrated and prone to spoiling later.
