What each ingredient does

Raspberries
Provide the fruit, flavor and body of the jam.
Sugar
Sweetens the jam and, with boiling, helps it thicken and keep.

The step that matters

Boiling the mixture quickly after adding the sugar. Once the sugar is in, the jam must boil hard and be stirred and skimmed often, because it can scorch and stick at this stage. Boiling drives off water and concentrates the sugar so the jam thickens as it cools.
