Serve

  1. Drain the fish and serve it on a hot napkin, garnished with liver and roe.

What each ingredient does

Cod fish
Forms the main body of the dish, cooking into flaky, tender flesh.
Coarse sea salt
Seasons the cooking water and flavours the fish as it poaches.
Saltpetre
Optional curing agent that helps keep the flesh pink and firm.

The step that matters

Boil gently until the fish is cooked. A rolling boil can break up delicate fish flesh and make it tough and ragged. Gentle heat cooks the fish evenly through to the bone while keeping it moist and intact.

Swap the radish

How well each one fits the dish's main ingredients (fish, horse, oyster):

  1. Cucumberfits about as well
  2. Radishthe original
  3. Mustardfits about as well
  4. Horseradishfits about as well

Fit is the average pairing score against fish, horse, oyster. Candidates are from the same food group and used in at least 100 recipes.
