What each ingredient does

Cod fish
Forms the main body of the dish, cooking into flaky, tender pieces.
Flour
Dries the surface of the fish so it browns evenly and crisps when fried.
Beaten egg
Helps the bread crumbs stick to the fish to form an optional crisp coating.
Fine bread crumbs
Adds a crunchy, golden coating when used optionally in place of flour.
Melted butter
Adds richness and fat to the fish at serving.

The step that matters

Fry the slices in hot oil until an even brown on both sides. If the oil is not hot enough, the flour coating absorbs oil and turns greasy instead of crisp, and the fish can cook unevenly. Hot oil sears the coating quickly, sealing in moisture and producing even browning.

Swap the white pepper

How well each one fits the dish's main ingredients (fish, flour, egg, bread, butter, anchovy, sauce):

  1. Capersfits better
  2. Parsleyfits better
  3. Nutmegfits better
  4. White pepperthe original

Fit is the average pairing score against fish, flour, egg, bread, butter, anchovy, sauce. Candidates are from the same food group and used in at least 100 recipes.
