Why it works: Hazelnut and horseradish share more aroma than cooks usually use. They rank in the top 10% of all ingredient pairs, and cooks put them together in 4 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

To Boil Halibut

Ingredients

Directions

Poach the fish

  1. Place the halibut in a fish kettle with the back facing down.

  2. Cover the fish with cold water and dissolve the salt and saltpetre in it.

  3. Bring the water to a boil, skimming off any foam that forms.

  4. Reduce heat and let the fish simmer until cooked, about 30 minutes for 4 pounds.

Serve

  1. Drain the fish and garnish with horseradish or parsley.

  2. Serve with egg sauce or plain melted butter.

What each ingredient does

Halibut
Is the main protein, cooked gently in the poaching liquid until it turns opaque and flakes.
Saltpetre
Helps keep the fish's color pink and firm, and gives a cured flavor.

The step that matters

Simmer gently after the boil. Once the water reaches a boil, reducing the heat to a gentle simmer keeps the fish tender. A hard boil toughens the proteins and breaks the flesh apart.
