Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Adds richness and a smooth, velvety body to the sauce.
Chicken liver
Adds body and a rich, savoury depth when pureed into the sauce.
Lemon juice
Adds acidity that brightens the flavour and balances the richness of the cream.

The step that matters

Pass the liver paste through a sieve. Sieving removes small fibres and lumps so the liver blends into the sauce smoothly instead of leaving a grainy texture.

Flavor stand-ins for the mace

How well each one fits the dish's main ingredients (lemon, parsley, cream, liver, chicken):

  1. Thymebetter flavor fit
  2. Marjorambetter flavor fit
  3. Tarragonbetter flavor fit
  4. Macethe original

Fit is the average pairing score against lemon, parsley, cream, liver, chicken. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
