Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the bulk of the sauce and soften into a tender, mellow texture when cooked.
Butter
Adds fat for frying, helping the cucumber slices brown and carrying flavour.
Beef broth or brown gravy
Supplies the liquid and savoury body that turns the cucumbers into a sauce.

The step that matters

Frying the cucumbers until golden brown. Browning through the butter and the floured surface creates savoury, roasted flavours that the sauce depends on. Frying too gently will leave the cucumbers pale and watery.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (cucumber, butter, beef, pepper, vinegar):

  1. Capsicumfits better
