Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main flavour and, once dried and powdered, concentrated savoury body for the sauce.
Strong veal gravy
Supplies liquid and savoury depth to the sauce.
Cream
Adds fat and richness, giving the sauce a smoother, rounder texture.
Flour
Thickens the sauce by absorbing liquid and forming a stable structure when heated.

The step that matters

Dry the mushrooms thoroughly. Residual moisture lets the powder clump, spoil and lose flavour in storage, so the mushrooms must be fully dry before they are pounded and sealed.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (mushroom, veal, cream, flour):

  1. Nutmegfits better
  2. Turmericfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against mushroom, veal, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
