Collared Beef

Ingredients

Directions

Prepare and cure

  1. Hang the beef in a damp place for 1–2 days to soften the outer skin.

  2. Rub the beef with coarse sugar and let it sit for 2 days.

  3. Mix saltpetre and coarse sea salt, then add to the beef.

  4. Let the beef cure for 10 days.

Trim and roll

  1. Remove bones and tough inner skin from the beef.

  2. Sprinkle the underside with shredded herbs before rolling tightly.

  3. Secure the rolled beef with a cloth and bind it tightly with broad tape.

Boil and press

  1. Boil the beef gently for about 5 hours.

  2. While hot, place the beef under a weight or in a press without removing the tape and cloth.

What each ingredient does

Thin flank beef
Forms the main body of the roll and becomes tender and sliceable when slowly cooked.
Coarse sugar
Adds gentle sweetness and balances the sharp saltiness of the cure.
Coarse sea salt
Draws out moisture and seasons the meat, helping it cure and keep.
Saltpetre
Helps the meat keep its pink colour and a firm texture during curing.

The step that matters

Boil the beef gently for about 5 hours. A gentle simmer cooks the dense roll evenly and keeps it tender. A hard, rapid boil can toughen the outer meat and break up the shape before pressing.

Swap the parsley

How well each one fits the dish's main ingredients (beef, sugar):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Pepperfits better
  4. Parsleythe original

Fit is the average pairing score against beef, sugar. Candidates are from the same food group and used in at least 100 recipes.
