What each ingredient does

Beef kidney
Forms the main body of the dish, cooked to a tender, sliceable texture.
All-purpose flour
Coats the slices to brown in the pan and thickens the gravy.
Butter
Adds richness and fat, and carries the flour for the gravy base.
Mushroom ketchup
Adds deep savoury, umami flavour to the gravy.
Lemon juice
Adds acidity that brightens the rich gravy.

The step that matters

Fry the slices on both sides until cooked through. Kidney turns tough and rubbery if overcooked, yet undercooked meat is unsafe. Even slices cook evenly and brown well through the flour coating, so checking thickness and timing matters.

Swap the lemon

How well each one fits the dish's main ingredients (beef, pepper, flour, butter, mushroom, ketchup, vinegar):

  1. Lemonthe original
  2. Limefits about as well
  3. Avocadofits less well
  4. Red currantfits less well

Fit is the average pairing score against beef, pepper, flour, butter, mushroom, ketchup, vinegar. Candidates are from the same food group and used in at least 100 recipes.
