Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Mince the cold roast beef finely, including some of the fat.

  2. Season the minced beef with cayenne, mace or nutmeg, and salt.

  3. Add minced shallots and chopped mushrooms or mushroom ketchup, and mix well.

  4. Moisten the mixture with gravy and place it in a deep dish.

Bake

  1. Top with a layer of bread crumbs and moisten with clarified butter.

  2. Bake in a slow oven at 300°F (150°C) for 20 minutes, or brown in a Dutch oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold roast beef
Provides the meat base, and the fat mixed in adds moisture and richness to the filling.
Shallots
Add a mild, sweet aromatic flavour that builds depth in the savoury filling.
Mushrooms
Add savoury, umami depth to the filling.
Gravy
Moistens the minced meat so it stays tender and juicy as it heats.
Bread crumbs
Form a crisp, browned topping that contrasts with the soft filling.
Clarified butter
Moistens the crumb topping and helps it brown richly in the oven.

The step that matters

Moisten the mixture with gravy. The minced meat is lean and dries out easily when heated. Adding enough gravy before baking keeps the filling moist, so it does not turn dry and crumbly in the oven.

Swap the mace

How well each one fits the dish's main ingredients (beef, pepper, shallot, mushroom, bread, butter):

  1. Thymefits better
  2. Parsleyfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against beef, pepper, shallot, mushroom, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
