To Roast Calf's Liver

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and roast

  1. Preheat your oven to 350°F (175°C).

  2. Lard the liver with bacon or wrap it in well-buttered paper.

  3. Roast the liver for 1 to 1¼ hours, basting constantly.

  4. Remove the paper and roast for an additional 10 to 15 minutes.

Make the gravy and serve

  1. For gravy, trim small bits of liver, flour them, and fry with a sliced onion.

  2. Add ¾ pint of water, a few peppercorns, and a small bunch of herbs; season with salt and a little lemon juice.

  3. Serve with a piquant sauce, such as poivrade or brown eschalot, and good gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Forms the main body of the dish, cooked gently to stay tender inside.
Butter
Wrapping the liver in buttered paper adds moisture and keeps the surface from drying out.
Bacon
Larding with bacon adds fat that bastes the liver and gives savoury flavour.
Onion
Frying sliced onion in the gravy adds sweetness and savoury depth.

The step that matters

Roast the liver for 1 to 1¼ hours, basting constantly. Liver is lean and overcooks quickly, turning dry and grainy. Frequent basting keeps the surface moist while the centre cooks through gently.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (liver, butter, vinegar, lemon):

  1. Shallotfits better
  2. Mustardfits better
  3. Cucumberfits about as well
  4. Onionthe original

Fit is the average pairing score against liver, butter, vinegar, lemon. Candidates are from the same food group and used in at least 100 recipes.
